Since Kale is one of the most nutrient dense and low calorie foods there is, here’s a fabulous recipe that will leave you super charged with energy:

Massaged Kale Salad

  • serving size: 2-3
  • 1 large bunch of kale
  • 1 teaspoon olive oil
  • Juice of half lemon
  • 1 teaspoon honey
  • 1/8 teaspoon sea salt
  • 2 tablespoons pumpkin seeds
  • 3 tablespoons dried cranberries
  • Parmesan cheese

Remove stems from kale and discard. Wash kale leaves and chop. Spin dry (in a salad spinner) and put the leaves into a large mixing bowl. Whisk lemon juice, olive oil, mustard, honey and sea salt in a small bowl. Pour over kale. Massage dressing into the kale using your hands until leaves soften (about 2-3 minutes). Top with pumpkin seeds, cranberries, and grated Parmesan cheese. Enjoy!
